I am posting this for a particular person, I hope she reads this. I was looking through my "New Mexico Cookbook" and found this recipe. Nutmeg jumped out at me and I thought of her. I have not made this, but it sure sounds good.
Indian Pudding
3 c Milk 1/2 tsp. salt
2/3 cup dark Molasses 1 tsp. cinnamon
2/3 cup yellow cornmeal 1/2 tsp. Nutmeg
1/3 cup sugar 1/4 cup butter
1 cup milk
Pre heat oven to 300 degrees. Put three cups of milk and the molasses into a saucepan and heat over low heat. Gradually stir the cornmeal, sugar, salt, cinnamon and nutmeg into milk mixture. Cook over low heat, stirring constantly until the mixture thickens (about 10 minutes)
Pour into lightly greased two-quart casserole or baking dish. Pour remaining cup of milk over the pudding. DO NOT STIR! Bake for 3 hours in a 300 degree oven, serve hot with whipped cream. Serves 4 to 6.
